In the south, ragi ambli is a drink that every villager will grow up drinking. It’s basically used as a morning meal. It’s usually made with sprouted ragi flour, jaggery and tamarind juice. We are familiar with it too. I have tried to recreate the sweetness and tanginess in that drink in this cookie. There is no soda and powder making this a healthier cookie. 

Ingredients

  • 1 cup sprouted ragi flour

  • 1/2 cup grated dry coconut 

  • 1/2 cup gluten free oats ( I used tru elements) 

  • 3/4 cup jaggery powder 

  • 1.5 tbsp lemon juice 

  • 1 tbsp cardamom powder 

  • 1 tsp nutmeg powder 

  • Water to bind


Method

  • Roast the oats slightly 

  • Combine all the ingredients with enough water to make and retain its shape

  • Bake at 180c for 25-30mins
