Welcome Winter | Oil-Free Mix Veg Cashew Curry

This is one recipe we do regularly at home when faced with the question, Aaj kya khana banega. Simple, quick, and a wholesome recipe. It has the nuttiness and very high nutrition of cashews along with the variety of veggies. Must have in your weekly meals, for adults and kids alike
In winters, add lots of chopped carrots, beans, even beet and spinach. In summers add your yellow pumpkin, and lauki.
Ingredients
- Cashew 8-10 (Can soak, not mandatory)
- Tomatoes: 2
- Onions: 1 (chopped)
- Vegetables: Carrots, Cauliflower, Turnip ( Chopped small pieces)
- Garlic: 3-4 pods
- Red chillies: 2 (or as per taste)
- Water: as required
- Rock salt: to taste
- Boiled potato: ½ cup (Optional)
- Coriander for Granish
Method
- Blend some cashews with tomatoes and garlic and red mirchi powder .
- Chop onion, add some salt, and let it sweat.
- Dry roast in a wok without any oil needed. If at all you feel the need use a little cold pressed oil.
- Steam all chopped veggies
- Add steamed veggies.You could also directly add raw chopped veggies and leave them crunchy.
- Add the blended tomato paste.
- Add salt.
- Give it a toss.
- Sprinkly the dried herbs on top.
- Add water to get the desired consistency and give one simmer.
- Incase your curry becomes too thin and you want thicken it, churn one steamed potato and add to the gravy.
- Garnish with Coriander and enjoy your curry.

- Food group: Veggies and nuts
- Both ingredients can be easily combined and are easily absorbed by our bodies. So a good time to eat this curry is foryour lunch or dinner. They can be combined with other food groups including grains and lentils too.
- Ideally these two food groups should not be combined with dairy or fruits.
