Tomato Cups - raw salad to tempt your kids

Here's’ a yummy way to have tomatoes! Tomatoes are naturally high on moisture content and hence have a hydrating and cleansing effect on our body. But it may get boring to have simply chopped tomatoes each time! Try this recipe of scooped tomato halves stuffed with carrots, onions and coconut to get an attractive, colourful yummy snack option. It's a simple and quick to do recipe and requires easily available ingredients.
Put on your thinking caps and you could plate it as an attractive looking salad to tempt your kids.
Ingredients
- Round Tomatoes: 2 medium sized
- Carrot: 1 peeled and grated
- Onion or spring onion: ½ (finely chopped)
- Coconut: ¼ grated
- Coriander: 6-7 leaves chopped
- Sesame (til), black/white: 1 tbsp (roasted)
- Rock Salt: to taste
- Lemon Juice for taste
- Green chillies: if desired
- Honey: 1 tsp (or more, optional)
Method
- Take tomato halves and scoop out the inside with a spoon. Keep the pulpy remains aside.
- Mix the grated carrot and coconut along with the rest of the ingredients including the tomato pulp for the stuffing-adjusting the lemon or salt for taste.
- If you wish to perk it up, add finely chopped green chillies, or if you want to sweeten, drizzle some honey.
- Use your hands to mix the stuffing well to release all the oils and flavors.
- With a tablespoon, fill this carrot mix into four scooped tomatoes till almost full.
- Lay them on a bed of grated carrots or your stuffing, as you will surely have more left from the above measures!
- Serve at room temperature.
