Spinach, Tomato and Fenugreek Leaf Salad – quick way to add greens to your intake!

Wondering how to increase your family’s intake of green-leafy vegetables! This recipe is a great way to add both spinach and fenugreek leaves in one dish. The addition of peanuts gives a whole new dimension to your salad.
Ingredients
- Tomato - 1 (chopped)
- Fenugreek Leaves -¼ cup (chopped, if you can’t find them substitute more spinach or lettuce)
- Spinach Leaves - ½ cup
- Mustard Seeds - ¼ tsp
- Cumin seeds- ¼ tsp
- Curry Leaves- 4-5
- Asafoetida- A pinch
- Rock Salt- As per taste
- Jaggery powder - As per taste
- Peanut Powder - 2 tsp (roasted)
- Coriander leaves - a handful
