An extremely mouth-watering gazpacho made with pineapples. A must try!

Ingredients

  • 1/2 ripe pineapple chopped to fine pieces
  • Remaining 1/2 pineapple for grinding
  • 1 chilli / jalapeño ( use with caution based on your taste buds)
  • Pink Salt to taste ( optional )
  • Few twigs spring onions

Method

  • Grind 1/2 of the pineapple, some spring onion twigs with chilli and salt to a purée
  • Addchopped spring onions, finely chopped rest of the half pineapple to this.

Enjoy this chunky spicy pineapple gazpacho.
