Rajma Beans Mexican Salad Style - enjoy a wholesome & rawsome dinner

This is yet another all-time favourite recipe, in which whole foods compliment raw veggies to create a Mexican style culinary delight. Tossed in tangy lemon-Date Syrup dressing, it can be served as a full meal as well!


Ingredients

  • Black beans (Or Red beans, Rajma) : 2 cups cooked
  • Avocados: 2-3 (chopped)
  • Fresh corn: 2 cups (Boiled)
  • Cherry tomatoes: 2 cups (halved)
  • Red onion: 1/2 cup (diced)
  • Cilantro: 1/3 cup (roughly chopped)
  • Red or green chilly: 1-2 per taste (chopped)

For the dressing:

  • Lemon juice: 1/3 cup (more if desired)
  • Date Syrup: 1- 2 tsp
  • Garlic powder: 1/2 tsp (or fresh cloves finely chopped)
  • Red chili powder: 1/4 tsp (optional)
  • Rock salt: as per taste
  • Ground pepper: as per taste
  • Cold pressed extra virgin olive oil: 2-3 tbsp (per taste, optional)

Method

  • Place all the veggies and rajma in a large bowl (except the avocado) and toss to combine.
  • In a small bowl, whisk the lime juice, olive oil, Date Syrup, coriander, chili powder, garlic powder, ground pepper and salt.
  • Pour dressing over veggies and toss to combine. Now add avocado and toss gently so they don't mash together.
  • Taste for salt and pepper, add as needed.
  • Serve immediately or refrigerate for 30 minutes.
