Pumpkin seeds milk is a wonderful way to add these healthful green seeds to your diet. Pumpkin seeds are a storehouse of various minerals and vitamins and are known to promote bone health, amongst numerous other health benefits. Pumpkin seeds milk has a subtle sweet flavour and is not very distinctive. It is thereby a simple replacement to dairy milk, especially for kids.
Ingredients
- Pumpkin seeds: 1 cups (without shells)
- Dates syrup or honey: 1 tbsp or as desired
- Cinnamon: ½ tsp
- Nutmeg powder: ¼ tsp
- Water: 2 cups
- Muslin Cloth
Method
- Soak the pumpkin seeds overnight or for 6-7 hours.
- Put the soaked pumpkin seeds in a blender with 2 cups of water and add the honey or dates syrup, cinnamon, nutmeg. Blend well.
- Now strain the contents through a muslin cloth or a nut milk bag.
- Serve the milk and enjoy!

- Variation - you could add raw cacao powder to get a chocolatey flavour.
- For a quicker version, soak pumpkin seeds in hot water for about an hour and continue with the recipe.
- You could make a large batch and store in the fridge. Stays good for 3 days.
