Potato Au Gratin in cauliflower sauce –Dairy-Free

Necessity is indeed the mother of invention. My daughter sent me a link of a potato au gratin made of milk, cheese and butter and said she trusts me to make a similar dish suitable to our food choices. Not wanting to let her down, I attempted this dish. It’s a meal-in-a-dish! Do try it and share your feedback.
Ingredients
- Cashew nuts: ½ cup
- Cauliflower: 2 cups (florets)
- Coconut milk:3/4 cup
- Potatoes: 4 nos( Big)
- Capsicum: ¼ cup (chopped into tiny cubes)
- Carrot: ¼ cup (chopped into tiny cubes)
- Green chili: 1 no(minced finely)
- Pepper: 1 tsp
- Mixed herbs: 1 tsp
- Garlic: 3 cloves(crushed)
- Dairy free Parmesan cheese: 2 tbsp
- Lime juice: ½ tbsp
- Rock salt: to taste
- Cold pressed coconut oil: to rub over the potatoes
Method
- Soak cashew nuts for at least two hours.
- Blend the soaked cashew nuts with minimal water to get a smooth cashew cream and keep it aside.
- Scrub potatoes well to remove soil and apply coconut oil and salt all over them and place in an oven and bake for around 40 minutes, at 220° deg centigrade.
- Steam cauliflower florets until soft.
- Cool the steamed cauliflower and blend with coconut milk, salt and crushed garlic to get a sauce of pouring consistency. Add a little water if you think you need to.
- Poke a needle to check if the potatoes are well cooked.
- Remove the potatoes and cool.
- Peel two potatoes and mash well with salt and pepper.
- Slice the remaining 2 potatoes to remove a part of it to reveal the pulp. Carefully scoop the pulp out of the potatoes to create a potato shell. Refer to the pic.
- Make a filling for the potato using the scooped potato, chopped capsicum, chopped carrots, minced green chilli, herbs, salt, lime juice and cashew cream.
- Fill the potato shells with the filling.
- In a baking dish spread a layer of spiced mashed potatoes.
- Invert the filled potato and place on top of the mashed potato layer.
- Pour cauliflower sauce over the potato to cover it fully.
- Sprinkle parmesan on top and bake for 20 minutes.
- Serve with a big serving of green salad.
Wellcure Tip
- The minced green chilli can be skipped or substituted with pepper.
- I used individual serving bowls of each serving portion. You could arrange them all in a single big baking dish.
- Cauliflower sauce can be spiced and flavoured in any way one likes.
