Ingredients
- 2 cups of fine grated plantain pith
- 1 cup red rice (washed and soaked in water minimum 2 hours)
- 1 cup variety of onion
- some curry leaves and coriender leaves
- 1¼ teaspoon of black salt
- 1 teaspoon cumin seeds
- 4 to 5 green chillies minced or grind it along with soaked rice
- 2 to 3 cups of water
Method
- Peel the skin of the plantain pith, outer few white fibrous layers until the stemmy layer is reached and grate it with a fine micro pieces.
- First grind the soaked red rice along with water (If you want to grind chillies, add them now).
- Then add grated plantain pith and add more water. Grind it to fine paste (dosa batter consistency).
- Transfer it to a container, add onion, jeera, curry and coriander leaves, and black salt, mix well.
- Now the batter is ready.
To make plantain Dosa:
- Heat and grease the tava with raw onion on medium heat. Raw onion is used to avoid the use of oil
- Once it is hot enough (to check, sprinkle water on the tava, you should hear a strong sizzling sound), pour a ladle of dosa batter in the center. Spread the batter from the center in a circular motion to make a circle.
- Once the dosa turns golden yellow, remove it from the tava and serve hot with coconut chutney or chutney of your choice.
- Repeat the same procedure for the remaining batter.
