Peas Pesto - add nutrient dense microgreens to your plate

Microgreens are tiny versions of leafy vegetables and herbs. They are nutrient dense, meaning they are more concentrated sources of vitamins and minerals. These mini-herbs & mini-veggies varieties can add new flavours to lift recipes not just visually but with respect to taste too.

There are different ways you could incorporate microgreens into your diet and reap the health benefits. Here is a simple, no-cook recipe using peas and basil shoot microgreens.


Ingredients

  • Fresh tender peas: 1 cup
  • Sesame seeds: 2 tsp
  • Pea shoots: ½ cup
  • Basil shoots: ½ cup
  • Garlic: 1 clove (optional)
  • Green chilli: 1 or more
  • Lemon juice: 1-2 tsp or as per taste
  • Rock salt: to taste

Method

  • Wash and soak sesame seeds for 3 to 4 hours.
  • Grind sesame seeds into a fine paste using little water. Take out the paste in a bowl.
  • Add peas, pea shoots, basil shoots, chilli and garlic to the blender. Blend to obtain a smooth paste.
  • Add the sesame seeds paste, saltand mix everything well.
  • Decorate the pesto with some microgreens on top.

Wellcure Tips:

  • Vary the source of fat. You can use pumpkin seeds, sunflower seeds, cashews, olives etc.
  • If you can't get basil greens, use coriander greens.
  • Choose tender peas for better taste

  • Microgreens are in between sprouts and baby greens and are known to be healthier than their full-sized version. Hence a great addition to your daily meals.
  • Could add to your salads, soups, curries etc. Not to be mixed with fruits.
