Mixed Vegetables in White Sauce - no dairy, no refined flour

The recipe is a healthier way of preparing the regular veggies in white sauce. White sauce is a common base used in many delicacies. Conventionally, it is prepared using refined flour and milk. With the objective of cutting out both of these ingredients, in this recipe the white sauce is prepared using coconut milk and potatoes. This white sauce is not only a nutritious replacement, it is smooth, creamy and yummy!
As the veggies are only lightly steamed, they tend to retain more of their moisture and nutrition!
Ingredients
- Potato: 1 (steamed)
- Thick coconut milk: 1 cup
- Onion: 1 medium (finely chopped)
- Capsicum: 1 medium (finely chopped)
- Celery: 1 stalk (finely chopped)
- Freshly ground pepper to taste
- Any fresh or dried herb to taste
- Mixed vegetables: ½ cup (steamed and finely chopped)
- Rock salt to taste
Method
- Put the coconut milk and the steamed potato in a mixer and grind to make a smooth paste.
- Add more coconut milk if necessary.
- In a saucepan cook onion, capsicum, celery and pepper till the onion becomes transparent.
- Now add the sauce and all the other ingredients into the saucepan and mix well.
- Bring to a boil to take out the starchy taste.
- Add steamed vegetables of your choice.
- Put off the gas. Now add salt. Do not add salt while the mix is boiling. The coconut milk will split in that case.
