An exotic soup with the goodness of veggies - greens, vegetables and herbs. This recipe is an easy yet tasty way to add greens like kale and spinach. Since this soup is loaded with vegetables it is nutritious and satisfying for all seasons.

Ingredients

  • Broccoli – 1 (floret)
  • Zucchini – 1 (chopped)
  • Spinach and Kale – 3 handfuls (roughly chopped)
  • Green peas- 2 cups
  • Vegetable broth- 4 cups
  • Garlic – 1 clove
  • Cilantro leaves – ½ cup
  • Parsley – ½ cup
  • Lemon juice- As per taste
  • Rock Salt – As per taste
  • Pepper- As per taste
  • Cold pressed oil- minimal (optional)
  • Almonds – to garnish (optional)

Method

  • Wash and roughly chop the broccoli, zucchini, spinach and kale. Set them aside.
  • Slice the garlic cloves finely.
  • Heat a pan and grease with very little cold-pressed oil.
  • Add the garlic and stir for a minute
  • Now add broccoli, zucchini, and green peas. Stir well and let it cook for another 5 minutes.
  • Pour in the vegetable broth and bring the soup to a boil. Reduce the heat and simmer for 15 minutes until vegetables are tender. Stir occasionally.
  • Now add the spinach and kale, simmer for another 2 minutes.
  • Turn off the heat and let the soup cool a bit.
  • Pour into a blender and add the lemon juice, cilantro, and parsley and then puree it.
  • Serve it in a bowl and garnish it with few cilantro leaves or chopped almonds.
