Lobhiya ki Phali with Grated Coconut - an oil-free snack!

Oil-free, quick to rustle up, easy to find ingredients. Lobhiya ki phalli is also called Chauli or long green beans. Thoran is a dry vegetable preparation in South Indian cuisine that is minimally spiced and has a generous amount of freshly grated coconut. Vegetables cooked this way can even make a great snack.
Ingredients
- Green long beans: 250 gms (chopped into even-sized tiny pieces)
- Cold-pressed coconut oil: 1 teaspoon (optional)
- Mustard seeds: 1tsp
- Coconut: ½ cup (freshly grated)
- Rock Salt: to taste
- Red chilli: 1 no (cut into small bits)
- Curry leaves: 1 sprig
Method
- Place the cut long beans in a steamer and cook until soft but not mushy.
- Heat a pan and roast mustard seeds, curry leaves and red chilli bits.
- Stir in the steamed beans and add salt. Give it a quick stir.
- Remove from fire and add grated coconut.
- Serve hot garnished with more grated coconut and cold-pressed coconut oil.

- While cooking vegetables, it's a good idea to use a little less salt to enjoy the actual flavours of the vegetables.
