Dairy-free can be made oil-free. Inspired by an episode on a TV show by celebrity chef, Peter Kuruvita, here is a recipe to make our humble chauli/ lobhia phali transform into a spiced and aromatic stew. It’s the combination of spices that makes this dish taste unique.


Ingredients

  • Green long beans (chauli/lobhiya ki phali): 250 gm (cut into 3 cm long pieces)
  • Onion: 1/3 cup (finely chopped)
  • Curry leaves: 10
  • Green chillies: 2 nos (finely chopped)
  • Chilli flakes: ½ tsp
  • Ground cumin: ½ tsp
  • Methi seeds: ½ tsp
  • Saunf seeds: ½ tsp
  • Turmeric powder: ¼ tsp.
  • Cold pressed coconut oil: 1 tsp (optional)
  • Thick coconut milk: ½ -1 cup
  • Rock salt: to taste

Method

  • Place the cut long beans in a steamer and steam until just cooked and bright green in colour. Ensure it doesn’t get overcooked.
  • In a pan heat oil (you can choose to skip the oil) and add the methi and saunf seeds, sauté for a little while don’t allow to splutter or change colour.
  • Add finely chopped onions and sauté, add chopped green chillies, curry leaves, steamed beans, ground cumin and salt and sauté for a couple of minutes.
  • Add turmeric and chilli flakes and reduce the flame so as to not burn the turmeric.
  • Add thick coconut milk and simmer for two minutes on slow flame.
  • Serve hot with steamed millets like sama/ foxtail millets.
