Dates Pickle - Raw and Oil-Free!

Pickle is not always oily or salty. Try this dates pickle without oil.Dates soaked in lime juice with a mix of spices to enliven your taste buds.I like to just eat it after a meal. You can serve it with Indian breads or as a side dish with any meal.
Ingredients
- Dates: 10-12
- Ginger: 2 inch piece
- Chilli powder: ¼ tsp
- Black salt: ½ tsp
- Jeera powder: ½ tsp
- Saunf: ½ tsp
- Lime juice: 3 tbsp
Method
- Remove the seeds of the dates and reserve two dates and cut the rest length wise as shown in the picture.Finelychop the reserved dates.
- Peel and cut ginger into thin juliennes
- Sun-dry saunf/ fennel seeds and crush them coarsely in a mortar and pestle.
- Combine all the ingredients and taste to adjust seasonings. Store in a glass jar.
- Mix it with a spoon every day.
- In two or three days the lime juice will be absorbed by the dates and the pickle will be ready to taste.

- Choose dates that are not too soft.
- Seasoning will mostly depend on the sweetness of dates.
- Try replacing red chilli powder with pepper.
