Creamy Veggies & Sprouts Salad – replace your fried snacks!

A mouth-watering salad which can easily replace any of the fried chaat snacks. A complete balanced meal in itself providing a range of nutrients in one bowl. Great way to introduce salads to kids.

Ingredients

  • Potato - 1 (steamed)
  • Sweet potato- 1 (steamed)
  • Cucumber - 1 (chopped )
  • Tomato - 1 (Chopped )
  • Moong dal - 1 cup (Sprouted)
  • Green chilli - 1 (Chopped)
  • Coriander leaves- 3 tbsp (Chopped )
  • Lime juice - 2 tbsp
  • Rock salt & black pepper – as per taste
  • Cashew Cream - 2 tbsp (100 gms soaked cashew made into thick paste)(optional)

Method

  • Steam the potato and sweet potato.
  • Cut the potato, sweet potato into thick pieces.
  • Scoop them from inside.
  • Fine chop the cucumber, tomatoes and green chilli.
  • Now in a bowl, put sprouts, green chilli and inner part of the scooped potato, sweet potato, cucumber and tomato.
  • Add the lime juice, salt, black pepper and cashew cream (optional).
  • Mix well and put this stuffing into scooped potato and sweet potato.
  • Garnish with coriander leaves and serve.
