Macaroons are crunchy yet soft, nutty quick eats usually made using egg white and refined sugar. How about trying the same without eggs and sugar? Packed with the goodness of coconut and dry fruits, this makes for a great snack or dessert, any time of the day and totally guilt-free. Liked by kids and grownups, alike.


Ingredients

  • Desiccated coconut:1 cup
  • Black raisins : 1 tbsp
  • Raisins: 1 tbsp
  • Dates: 4 nos
  • Cold-pressed coconut oil: 1 tsp
  • Vanilla: few drops
  • Jaggery powder: 1-2 tbsp (optional)
  • Rock salt: a pinch

Method

  • Grind the black raisins, raisin and dates in a mixie jar coarsely. Keep it aside.
  • In the same jar place 1 cup of desiccated coconut, coconut oil, jaggery powder, salt, vanilla and blend for a few seconds to mix well. (skip the jaggery if you don’t want it very sweet)
  • Mix the blended dry fruits to the desiccated coconut mix and knead well.
  • It will appear crumbly, don’t worry.
  • Press the dough tightly into a scoop/ scoop like spoon of desired size and tap. The dough will loosen and release from the scoop.

  • Place on a baking sheet and bake at 180 ° C for less than 10 mins or until lightly browned or the edges change colour.
  • Serve warm or cool and store in an airtight jar.

Wellcure tip:

  • Since the recipe doesn’t use any flour the time taken to bake will be really short. Watch while baking to avoid burning.
  • Experiment with cranberries, figs or apricots.
  • Change the flavoring to cardamom or cinnamon or nutmeg to vary the flavours.
