Ingredients

  • 5 cups cauliflower florets
  • 1 cup raw cashews
  • 1 tsp sea salt
  • 5 cups water

Method

  • In a large bowl cover the cauliflower florets with the boiling water. Let sit for 3 minutes, then drain and set aside.
  • In a food processor combine the cashews and sea salt.
  • Pulse to achieve a fine meal.
  • Add the cauliflower and pulse to create a “rice-like” texture. Do not over process.
