Cauliflower Rice

Ingredients
- 5 cups cauliflower florets
- 1 cup raw cashews
- 1 tsp sea salt
- 5 cups water
Method
- In a large bowl cover the cauliflower florets with the boiling water. Let sit for 3 minutes, then drain and set aside.
- In a food processor combine the cashews and sea salt.
- Pulse to achieve a fine meal.
- Add the cauliflower and pulse to create a “rice-like” texture. Do not over process.
