Cashew Nut Milk (Soaked Version)

Trying to go off dairy, but concerned about missing out on the goodness of milk especially for your kiddos?Here's a recipe to offer you a dairy free ( read as free of chemicals and hormones) alternative, full of nutrition! Raw cashew milk is rich and buttery, and most closely resembles the look and texture of dairy milk. By blending cashews and water, you can make a milk that's incredibly smooth, and doesn't need straining.
Ingredients
- Cashews – ½ cup (Soaked overnight)
- Honey – 1 tsp (to taste)
- Crushed Cardamom / elaichi: 1 (only the seeds)
- Water: 1 glass
Method
- Soak cashews for 4 hours or overnight.
- Wash well, discard water.
- Add into a blender. Add ½ of the water.
- Blend well.
- Add crushed cardamom.
- Add the remaining water. Blend again.
- Pour in a glass, add honey.
- Drink (you can warm it up if you like your milk hot).
Eating Guide:
Food group: Nuts
Nuts & nut milks are great additions post meals at night time. Easy to combine with other food groups (except fruits or dairy), cashew milk can easily replace dairy in all preparations. Use it to make yummy vegetable curries, or add them in soups. Or simply have as is as 'milk'.
PS: Use only one variety of nut. Do not mix nuts.
