Carrot capsicum coconut salad

I enjoy this colorful salad. It is filled with nutrients from carrot, capsicum and coconut. Sunflower seeds add crispness.


Ingredients

  • Carrots medium size 3 nos
  • Capsicum medium size 3 nos
  • Coconut fresh half
  • Lemon one
  • Sunflower seeds for garnish

Method

  • Wash and Cut all the vegetables in small pieces.
  • Chop them very fine. I normally use a high speed manual chopper.
  • Grate the coconut and add same.
  • Put all chopped vegetables and grated coconut in a big bowl.
  • Mix it properly and squeeze lemon.
  • Garnish same with sunflower seeds.
  • Enjoy this yummy healthy salad.
