Carrot & Ginger Soup

Servings: 6-8 Servings
Ingredients
- 1 onion, chopped
- 750 gm carrots, peeled and diced
- 1 tsp fresh ginger, grated
- 2 tsp coriander seeds, crushed
- 4 cups vegetable stock or water
- Rock salt and pepper to taste
- Fresh coriander or parsley to garnish
- 1/4 cupcoconut milk
Method
- Saute the onions in a hot pan for about 5 minutes until transparent. If they stick, add a little water.
- Add the carrots, ginger, and crushed coriander seeds and stir on medium heat for 5 minutes.
- Add the stock or water and bring to a boil. Cover and cook until the carrots are tender.
- Purée the soup in a blender and then strain through a sieve.
- Reheat the soup and season with salt and pepper.
- Ladle into bowls, and place a spoonful of coconut milk on each bowl and garnish with coriander or parsley.
