This is one of our favourite ways to keep the raw foods high. Goodness of veggies mixed with wholesomeness of black chickpeas. The lemon and salt flavour lends a simple flavour. If you have the green and imli chutney ready in fridge just add that. This is one salad which no one can ‘not-like’. Try it & press the ‘like’ button if you agree.


Ingredients

  • Black chana - 1 cup (Soaked overnight & boiled)
  • Onion – 1, medium size
  • Tomato – 1, medium size
  • Green capsicum – 1 small
  • Salad leaves – a small bunch
  • Coconut – a few pieces
  • Coriander – a small bunch
  • Rock salt & black pepper – as per taste
  • Lemon juice – ½ lemon or as per taste

Method

  • Soak black chana overnight. In the morning, boil it.
  • Finely chop the onion, tomato, capsicum, salad leaves and coriander.
  • Grate the coconut into fine, thin strands.
  • Mix all of the above in a bowl.
  • For the salad dressing, add juice of half a lemon, rock salt & black pepper, as per taste.
  • Add dressing just when you are about to eat.

Depending on your taste palette, you can add more of the black chana or more of your favourite veggies...enjoy...Scrumptious!!!

Veggies, are loaded with enzymes and high water content. They aid in digestion and act as daily dose of vitamins and minerals.
Kala Chana (Black chickpeas) is your legume category. These are whole foods and great addition for much needed protein and fiber.
Add some potatoes and this can be eaten as a full meal.
