Bitter gourd (karela) sabji in coconut oil

Bitter Gourd vegetable is famously known for its healing properties especially when it comes to bringing your high sugar levels down. Additionally, it is one of the vegetables that is also known to detoxify our entire system and it gets rid of toxins and accumulated fat. Here is a very delicious recipe of Bitter Gourd vegetable made with Cold Pressed Coconut Oil.
Ingredients
- 3-4 bitter gourd vegetable (karela)
- Cold-pressed coconut oil - as little as possible
- 1 tsp mustard seeds
- 4-6 curry leaves
- 3 spoons of dry powdered coconut
- 1-2 spoons of dry coriander seeds
- 1 chopped onion
- 1/2 teaspoon jaggery
- 1- tsp of red chilli powder
- 1 tsp garam masala powder
- Rock salt to taste
- Fresh green coriander leaves for garnishing
Method
- First, the vegetable needs to be washed thoroughly. Secondly, the seeds on the inside of the vegetable should be removed, by cutting the vegetable in half, and then scooping out the seeds, then further the vegetable needs to be cut into two more pieces so that one bitter gourd is divided into four pieces.
- Then the cut vegetable needs to be steamed with salt and turmeric added in, for 10 minutes. You can turn off the heat after the vegetable is cooked.
- Roast the dry coconut powder, coriander seeds and onion separately. Once all these ingredients are roasted it will leave a beautiful aroma.
- Blend all the above along with the chilli powder and garam masala powder. Add little water.The mixture is supposed to be very fine without any lumps.
- Take a pan and heat some cold-pressed coconut oil, add mustard seeds and curry leaves. As they splutter, add on the ground masala and fry it for 2-3 minutes.
- Then add the bitter gourd and fry it until the masala is golden brown. Add more water for the consistency you need. Add salt to taste, and some jaggery. Let it cook for another 2 minutes. In the end, add fresh green coriander leaves for a good presentation of the dish.
- The delicious bitter gourd vegetable is ready.
