Better-Than-Tuna Salad

Ingredients
- 1 cup boiled garbanzo beans (chickpeas) or 1 cup tinned chickpeas
- ¼ medium-sized onion chopped
- 2 tbsp finely chopped capsicum – red or green
- 2 tbsp finely chopped celery
- 5 – 6 tbspvegan mayonnaise
- lemon juice to taste
- salt and pepper to taste
- parsley for garnish (optional)
Method
- Press the garbanzo beans between your fingers or a fork to flatten them, avoid smashing them.
- Add the other ingredients.
- Mix well.
- Garnish with parsley and serve.
