Here comes a new delightful beetroot tofu salad....rich with herbs, nuts and a great nutritional value.

BENEFITS--

I. BEETROOT--🍑🍑

1. Beets are loaded with vitamins and minerals and low in calories and fat. They also contain inorganic nitrates and pigments, both of which have a number of health benefits.

2. Beets contain a high concentration of nitrates, which have a blood pressure-lowering effect. This may lead to a reduced risk of heart attacks, heart failure and stroke.

3. Beets are a good source of fiber, which is beneficial for digestive health, as well as reducing the risk of a number of chronic health conditions.

II. TOFU--

1. Soy isoflavines have been found to help reduce levels of LDL "bad" cholesterol, although it does not seem to increase HDL or "good" cholesterol levels.

2. Protein, and particularly soy protein, may enhance renal function, and it could have benefits for people who are undergoing dialysis or kidney transplantation.

3. Soy isoflavones may help reduce bone loss and increase bone mineral density, especially after menopause. They have also been reported to reduce some other symptoms of menopause.

Ingredients

  • 1 cup shredded beetroot
  • 1 chopped tomato
  • 1 chopped onion
  • 50 gm of tofu cut in cubes
  • 1 tablespoon unsalted peanut butter
  • 1 tablespoon mint chutney
  • Half green chilli chopped
  • 1 tablespoon seed mix
  • Little bit of pink salt
  • Pinch of black pepper powder.

Method

  • Take a small bowl mix peanut butter and mint chutney with a little bit of water make it a paste consistency add pink salt and black pepper and mix them well. keep it aside.
  • Mix all the vegetables and tofu and mix with the peanut butter-mint paste and mix it well. garnish with mix seed and serve well.
