The cinnamon roll is a sweet roll served commonly in northern Europe and North America. Traditionally this is made with a puff pastry sheet made of yeast, refined flour, dairy butter and refined sugar which is highly unhealthy and cannot be served or consumed.

This version is made with only ripe bananas, dates, cinnamon and cashew. It's plant-based and very healthy when compared to its traditional version.

Ingredients

  • Long sweet ripe yellow bananas
  • 20 soaked dates
  • 1 tsp cinnamon
  • 20 soaked cashews (optional)
  • Water as needed

Method

  • Make date paste in a mixie with very little water (used for soaking)
  • Add cinnamon to it and mix and keep aside
  • Make a paste of cashew with enough water to resemble a dosa batter consistency. It must not be too thin and transparent. While grinding add little water at a time and grind.
  • Preheat the oven to 120 deg C
  • Line a baking tray with parchment paper
  • Peel the bananas
  • Carefully slice each banana LENGTH-WISE from top to bottom
  • Arrange the layers on the tray without any overlaps
  • Bake them for 1 hr at that temperature. At this temperature, they get dehydrated and chewy but not baked/crispy
  • At the end of 1 hr, the natural sugars would have melted and bonded to form chains to bind with each other making the banana chewier
  • Carefully remove the banana slices, spread a layer of dates paste on it and carefully roll them and keep them aside. The slices will not break like fresh bananas. It can be easily rolled

  • Garnish them with cashew drips (optional) and enjoy. Here cashew paste is used to tone down the overwhelming sweet taste from the concentrated banana and dates.

Note: Fruits are best-had whole and fresh. Use this recipe only as an occasional treat.
