Arrowroot is a plant very often found in the coastal areas. The rhizome of the plant is used and this is very similar appearance to turmeric plant. People use starch taken from the root and rhizome (underground stem) to make medicine.
Arrowroot has many medicinal properties. Arrowroot is often used as a nutritional food for infants and for people especially recovering from illness. Arrowroot is very useful in the treatment of intestinal and stomach ailments. This very effective in solidifying the stools and hence it is very effective in treating loose motions or diarrhoea.
Direct application of rhizome gives a soothing effect on the gums.
Cookies are made out of this rhizome and commonly available in the market.
Otherwise, as in foods, arrowroot may be used as an ingredient in cooking. Arrowroot is often replaced with cheaper starches, including potato, corn, wheat, or rice starch.
Ingredients
- Arrowroot powder: 1/2 cup
- Grated Jaggery: 3/4 cup
- Freshly grated coconut: 1 tbsp
- Cardamom powder: a pinch
- Raisins: 2 tbsp
- Cashew nuts: 8-10
- Almonds: 5-6
- Water:one and half cup
Method
- Take some water, (say one third cup)in pan and heat it on a medium flame. Now you may add the grated jaggery and continue heating.till the jaggery melts and becomes brown in colour. Remove impurities using a strain.
- Now heat the dark brown jaggery solution with the grated coconut and heat and keep it aside.
- Now take the arrowroot powder and mix it in a bowl and add 1 cup of water. Mix it thoroughly into a fine liquid form and remove all lumps from it.
- Heat this arrowroot solution in a heating pan. The solution starts thickening after 4-5 minutes. The solution will change the white cloudy colour to a transparent colour in the process of boiling.
- Now, pour the jaggery solution and stir it well to form a golden brown coloured solution. You may add cardamom powder to add flavour.
- Now keep on stirring the solution and now slowly mash the lumps with the back of a ladle.
- Transfer the thick mixture to a plate with.foil paper in order to get its shape.
- Use a flat-based cup or plate to level the mixture. Cut the halwa into desired shapes.
- Garnish it with the almond, cashew nuts and raisins.
- Arrowroot halwa is ready and serve it as a sweet confection. One of the best medicine if someone has watery stools or suffering from loose motions.
