Adding a twist to Green Moong Dal or Bean Salad (sprouted or boiled) with Fresh Coriander Mint Dip or Chutney

Green Moong dal (in sprouts or boiled form) though very healthy is difficult to cut through as salad especially with kids. One could try adding this little twist by adding Coriander MintDip to make it more interesting. I tried and voila, it was all gone in a jiffy. It is a regular at home now! Boiled Moong bean salad is a very simple to make, healthy snack/breakfast item. All you need is a little pre-planning. Sprout or boil the green moong dal the night before, refrigerate and use it the next day as a cold salad. Most of the ingredients are available in the kitchen or the fridge. Just need a little fixing.
It is also a great way to use the green chutney you made for dinner or lunch last night. It can be done in 5-10 minutes if things are ready.
Suggested variations/additions to boiled moong bean salad: 1/2 cup of finely chopped cucumber and capsicum cubes.

Ingredients
- Moong dal: 1 cup (Boiled or Sprouts)
- Onion: 1 small (chopped)
- Spring Onion with leaves: ½ to 1 cup (Optional)
- Tomatoes: 1 small (Chopped)
- Carrot: 1 (Chopped or Grated; Optional)
- Garlic Cloves: 1-2 (Optional)
- Coriander leaves: 2-5 tsp (as per liking)
- Cumin seeds powder: 1 tsp (Optional)
- Rock salt as per taste
For Green Coriander Mint Dip
Ingredients
- Coriander (Dhaniya): 2 cups
- Mint (Pudina): 1 cup
- Garlic: 2-3 pods
- Green chillies: 2 (as per taste)
- Lemon juice: 1 qty (as per taste) or Amla – 1 qty
- Jaggery powder: 1/2 tsp (Optional)
- Sendha Namak: to taste
- Water – 1/4th cup as needed.
Method
- You could boil the moong dal beans or sprout them beforehand and keep them in the refrigerator. One could use them for 1-2 days.
- Chop the veggies into little pieces, carrots can be chopped long thin or small cubes; chillies and coriander should be chopped finely.
Putting it all together
- Mix the boiled or sprouts moong beans with 3-4 tsp of Green Coriander Mint Dip or Chutney, veggies, cumin powder. Adjust salt.
- Serve immediately.

OR
- Wash the coriander and mint well. Don’t discard the coriander stalk, use it too (remove roots and wash well before storing).
- Add all ingredients into a mixie. Grind well.
- Don’t add too much water; just a bit to churn.
